Today, rather than writing my weekly blog for CampusCalm (Maria gave us all a vacation), I got to put a little extra time into making one of my favorite things…smoothies! As someone who is OBSESSED with fruit, I love spring and the fact that I can now drink smoothies almost daily. They’re great for boosting your energy levels (especially after a workout) and for giving you that much needed fiber. Today, for lunch, I made this one!

Here’s the recipe….but the great thing about smoothies is you can make it with almost anything:
- 1/2 cup of skim milk
- 1/2 cup of greek yogurt.
- 1/4 of a cantaloupe
- About a handful of blueberries
- 1/3 of a pineapple
- 5-6 strawberries
- 1 stalk of celery
Makes two full cups…I save one for dessert or lunch the next day
